where/how do people in NZ get their Monero these days? I got the wallet setup and everything now but just wanting to know the best and most secure way

ez - buy shitcoins from somewhere like easycrypto, exchange for monero on changelly or changenow, sent to your own wallet, then send to market. once you've done it once, it's a super easy and really fast process, you can go from cash to xmr on markets within half an hour usually
easycrypto is KYC, but theres little other easy options available here in nz

https://trocador.app/en/ is the way to go, they have an awesome support team if anything goes wrong.
You don't have to by from a centralized exchange if you don't want too.
